Alison and David Lea-Wilson started Halen Mon, the Anglesey Sea Salt Company, in 1997. Fans include chefs Heston Blumenthal, Anna Jones, and the maker of Barack Obama's favourite caramels. They have always made a living from the sea, and been fascinated by the process of making sea salt. Their daughter, Jess, is a food writer and designer based in East London.
