SUSAN E. MITCHELL, CFE, is the principal of Fast & Fresh Cuisine, an international consulting firm based in Coeur d Alene, Idaho, and Brisbane, Australia. A culinary consultant, caterer, instructor, nutritionist, restaurant reviewer, food writer, and food stylist, she studied at Le Cordon Bleu (London) and La Varenne (Paris) cooking schools. She holds a bachelor of science degree in home economics: food, nutrition, and institutional management from Washington State University. She is also the author of five cookbooks.
