Cholesterol is a waxy fat that is carried by the bloodstream to service all our body cells and organs. Cholesterol is divided into 'good' and 'bad' types and too much of the latter can lead to health problems such as strokes, heart attacks and hardening of the arteries. In the first part of the book dietitian Catherine Collins looks at the prevalence of high cholesterol and discusses the causes and the symptoms. About Daniel Green

Daniel Green was an overweight teenager who learned how to create healthy gourmet meals for himself to slim down. 'I love food so I have taught myself to adapt the foods I love to be both low fat and tasty' he says. He currently works as an in-house chef for the NBC network in the US and makes regular appearances on BBC2's Saturday Kitchen. Catherine Collins RD is the Chief Dietitian at St George's Hospital. As a spokeswoman for the British Dietetic Association she is committed to providing accurate and impartial medical advice, and is a regular contributor to articles in the popular press such as The Times and The Observer Food Monthly.
