This volume is divided into four seasonal sections, each having four chapters covering starters, fish, meat and puddings, and focusing on a relevant regional market. For example: early spring vegetables from Jersey; summer fish from Brixham; autumn game from Newcastle; and winter fruit from Paris. Descriptions of the individual markets are intended as a source of ideas and inspiration to the cook. The intended message is that buying fresh ingredients from local markets is not only fun, but is often cheaper, and produces better results in the kitchen.
