Australian chef Tracey Lister knows how to shop, cook and eat in Vietnam. After 15 years in the Melbourne restaurant scene, Tracey took a two-year sabbatical in Hanoi, where she met Jimmy Pham, founder of Koto, a grass-roots charity that helps street kids through vocational training in cooking and serving. Tracey stayed on at Koto, setting up accredited training programs for the students. Tracey continues to work at Koto, travelling between Hanoi and Melbourne. 'Koto' stands for 'Know One, to Teach One'
